Giving you all a couple different recipes this week as I missed the past few weeks due to uhm ya know, life…
Okay so, yes we all know by now I went Gluten Free to help heal my gut… Well one thing about going GF is that most of the GF options are filled with not-so-good ingredients for someone on a mission to heal their gut. Along with eliminating gluten, I also omitted whole grains like oats, brown rice, quinoa, etc. and a lot of GF flours are made with these ingredients. Contrary to popular beliefs of ‘whole grains’ being super good for you due to their fiber, I believe they are actually too complex for our digestive systems to fully break down and when we are trying to heal our guts (to heal ourselves) we should focus on simple, easy to digest foods. So on the struggle to find a gut-friendly cracker meeting my current dietary restrictions alas, another homemade recipe was born… Easy homemade Gluten Free Crackers.
To be honest, I’ve had this recipe scribbled in a random notebook for awhile and I’m pretty sure the base of these crackers was inspired by some Pinterest post I saw way long ago and I can’t seem to find the recipe to tag here, so just take my word for it that I can’t take all the credit here. However, I can take credit for different additives and cracker flavors. ;)
These are pretty straight forward to make and I’m always super grateful to myself when I prep these ahead of time during a busy week for a quick grab and go snack. I love these paired with a good cheese, pesto or my Cauliflower Hummus.
